Sweet eggs! (Scrambled eggs with soft dates)

Scrambled eggs á la dates!! or "beid be agwa".. *licks lips*

Owkay so before starting to cringe your nose and shutting the idea out (like many people have), giiiive it a chance! This is one of my favorite types of making eggs and it definitely wouldn't be if it wasn't yummy-licious! ;D

This sweet egg dish is basically made of scrambled eggs and dates. It's been passed down for generations and we believe it's of a turkish origin, not quite sure though.

So put on your chef hats (always wanted one xD) and let's get started!

First of all, you're definitely going to need the dates. Full ones or paste, makes no difference. Date paste will give a softer result, so whatever rocks your boat!

If you're using full dates, you lose the seeds and cut them up in little pieces. If it's the paste, then roll it up in little date balls.. comme ça..

N' watch out for nosy kitties =D

You'll also need a couple of eggs, a frying pan and a liiittle bit of butter.

Let the butter sizzle over low heat and place the date paste balls in there for a little while, say 3 or 4 minutes. They tend to get attracted to each other so try to keep the buggers apart.

Zen ve shall add ze eggs! Break them on top of the date balls and keep mixing them all together with a wooden spoon until the eggs are cooked.

The eggs should start getting a bit brownish and it should finally look something like this.

Fill that up in sandwiches and bon appetit!!
